Apple And Veal Scallop Recipe
Apple and veal scallop is a fruited veal recipe. Skillet cooked this meat scallop is prepared with lemon juice concentrate and apple cider with sliced apples. Creamed with whipping cream for a lovely texture, this apple veal scallop is a luxurious preparation.
Ingredients
2 large all-purpose apples, peeled, cored and sliced
1/4 cup Lemon Juice from Concentrate
1/2 cup unsifted flour
1 teaspoon salt Fresh ground pepper
8 veal scallops (about 12 ounces)
1/4 cup margarine or butter
1/2 cup apple cider or apple juice
1 cup (1/2 pint) or whipping cream, unwhipped
Directions
In medium bowl, combine apples and brand; set aside.
In paper or plastic bag, combine flour, salt and pepper.
Add veal, a few pieces at a time; shake to coat.
In large skillet, brown veal on both sides in margarine; remove from skillet and set aside.
Stir in apple mixture and cider, scraping bottom of skillet.
Cook 2 to 5 minutes.
Slowly add cream, stirring constantly.
Simmer 5 to 10 minutes or until slightly thickened.
Add veal; heat through.
Refrigerate leftovers.
