 Delicious Diet Cream - 1 cup
 Divided ground cinnamon, for sprinkling

Directions

GETTING READY
1 Preheat the oven to 325°Fahrenheit.
2 Spray a 9 x 9-inch pan with vegetable spray.

MAKING
3 In a large bowl, combine eggs, honey, oil, and vanilla, beating well.
4 In a bowl, sift together whole wheat pastry flour, unbleached white flour, baking powder, cinnamon, and nutmeg.
5 Combine with the beaten ingredients.
6 Mix thoroughly.
7 Peel the apples, core, and chop.
8 Stir into the batter, mixing well.
9 Into the prepared pan, transfer the mixture.
10 Bake on the middle shelf of oven, for 30 to 35 minutes or until a cake tester inserted into center comes out clean.

SERVING
11 Serve warm or cold.
12 Each serving topped with a tablespoon of the diet cream and sprinkled with cinnamon.
