Ingredients

 
2 large tart apples, peeled, cored, and diced
 
1 large onion, thinly sliced
 
1 small green pepper, seeded and diced
 
1 clove garlic, crushed
 
3/4 cup white vinegar
 
3/4 cup brown sugar
 
1 12-ounce package pitted prunes, halved
 
1 teaspoon dry mustard
 
1/2 teaspoon salt
 
1/2 teaspoon ground ginger
 
1/4 teaspoon freshly ground black pepper

Directions

1. Combine the apples, onion, green pepper, garlic, vinegar, and sugar in a large saucepan. Bring to a boil, stirring to dissolve the sugar.
2. Reduce the heat and continue to simmer, stirring occasionally, for about 15 minutes, or until the onion is tender.
3. Add the remaining ingredients and simmer for 10 minutes, stirring often, until the mixture is thick like jam. Pour into canning jars, seal, and process in a boiling water bath for 15 minutes. Cool, test the seal, and store in a cool dark place. Great with pork, ham, roast turkey, and chicken.
