| 3 large Golden Delicious or Granny Smith apples, peeled, quartered and cored | ||
| 3 tablespoons chicken broth, either homemade or canned | ||

Directions
With a vegetable peeler peel zest from lemons in thin strips; remove only yellow rind.
Chop zest finely.
Into a measuring cup squeeze lemon juice.
Reserve 1/4 cup juice.
In a heavy saucepan place apples and lemon juice; cover.
Cook over low heat for 20 minutes.
In a small saucepan combine lemon zest and water to cover.
Bring to a boil over medium-high heat.
Cook for 7 to 8 minutes; drain.
In blender container or food processor combine the apples and chicken broth.
Process until pureed.
In a small bowl combine apple puree, lemon zest, salt, pepper and cinnamon; mix well.
Serve hot.
