Directions
To make the custard cream, pour the milk into a bowl and heat in the microwave oven for 3 minutes on HIGH.
Whisk the egg yolks in a large bowl.
Add 3 oz (75 g/3 oz) of sugar, the cornstarch (cornflour) and cinnamon.
Pour over the hot milk, whisking constantly.
Microwave, uncovered, on HIGH for 1 1/2 minutes.
Whisk again and microwave for a further 1 1/2 minutes.
Whisk again.
Add the sour cream (creme fraiche) and Calvados.
Stir well, cover with a plate and leave to cool.
Peel and core the apples and slice thinly.
Put in a casserole, add the remaining sugar and pour over the lemon juice.
Cover and microwave on HIGH for 10 minutes.
Leave the apples to rest for 5 minutes, then mash with a fork.
Refrigerate.
Add half of the glace fruit to the custard cream.
Pour half the apple puree into a glass serving bowl.
Cover with half the cream custard, then the remaining apple puree and finally the remaining custard.
Refrigerate for 2 hours.
