Ingredients

 Red onion1 Large, thinly sliced
 3 large, tart apples, cored, pared, and thinly sliced
 2 cucumbers, peeled, and thinly sliced
 3 or 4 slices pimiento
 Vegetable oil1/2 Cup (16 tbs)
 1 /4 cup lime or lemon juice
 Sea salt1 Teaspoon
 Garlic1/2 Clove (5gm), crushed
 1 cup cooked coarsely grated chestnuts

Directions

Combine onion, apples, cucumbers, and pimiento in a salad bowl.
Mix together vegetable oil, lime or lemon juice, sea salt, and garlic.
Pour over salad and marinate 1 hour.
Sprinkle hot grated chestnuts over salad
