Ingredients

 Vegetable1/2 Cup (16 tbs)
 Boiling water1/2 Cup (16 tbs)
 2 cups cooked grain
 Salt1/4 Teaspoon
 Ground nutmeg1/2 Teaspoon
 Olive oil2 Tablespoon
 1/2 cup shredded Cheddar or jack cheese
 Frozen spinach1 pound, drained
 Garlic powder1/4 Teaspoon
 Black pepper1 Dash
 Marinara sauce1 Cup (16 tbs)
 Parmesan cheese1/4 Cup (16 tbs), grated

Directions

Soak TVP in 1/2 cup boiling water until softened. Combine with grain, salt, nutmeg, olive oil and cheese. Turn into an oiled 8-inch square pan.
If using fresh spinach, steam until just limp and drain well. Spread steamed or thawed spinach over grain mixture.
Stir garlic powder and black pepper into marinara sauce. Pour over spinach. Sprinkle with Parmesan cheese.
Bake uncovered at 400° F. for 45 minutes.
