Vegetarian Antipasto Salad Recipe

Ingredients

 
1 medium zucchini, thinly sliced
 
1 cup cauliflower flowerets
 
1 green onion, sliced
 
3/4 cup commercial Italian salad dressing
 
6 slices salami, cut into thin strips (about 6 ounces)
 
1 cup (4 ounces) cubed Provolone cheese
 
2 medium tomatoes, cut into wedges
 
1 ripe avocado, peeled and sliced
 
1 small head leaf lettuce, torn
 
1 tablespoon grated Parmesan cheese

Directions

Combine zucchini, cauliflower, and green onion in a shallow container.
Pour Italian salad dressing over vegetables, and toss lightly.
Cover and chill at least 4 hours.
Combine marinated vegetables and next 5 ingredients in a large bowl; toss gently.
Sprinkle with Parmesan cheese.
