Ingredients

 1/2 small head cauliflower, cut in flowerets and sliced
 2 carrots, pared, cut in 2-inch strips
 2 stems celery, cut diagonally in I-inch pieces (1 cup)
 1 small onion, cut in 3/4 inch squares
 1 green pepper, cut in 2-inch strips
 1 jar (3-ounces) stuffed green olives, drained
 Wine vinegar3/4 Cup (16 tbs)
 1/2 cup olive or salad oil
 Sugar2 Tablespoon
 Salt1 Teaspoon
 Oregano leaves1/2 Teaspoon
 Pepper1/4 Teaspoon
 Water1/4 Cup (16 tbs)

Directions

Combine all ingredients in 3-quart casserole.
MICROWAVE 8 to 10 MINUTES on HIGH, or until mixture has come to a rapid boil, stirring twice.
Reduce setting.
MICROWAVE 4 to 6 MINUTES on '6'.
Cool.
Refrigerate at least 24 hours.
Drain well before serving.
Will keep several days in refrigerator, covered.
Serve as appetizer, salad, or garnish for meats.
