Antipasto Mini Pizzas Recipe
Ingredients
| Tomatoes | 1 3/4 Cup (16 tbs) | |
| Artichoke hearts | 3/4 Cup (16 tbs), chopped | |
| Ripe olives | 1/2 Cup (16 tbs), drained | |
| Green bell pepper | 1/2 Cup (16 tbs), chopped | |
| Parmesan cheese | 2 Tablespoon, grated | |
| 8 plain bagels, lightly toasted, each half cut crosswise into 2 pieces | ||
| Shredded mozzarella cheese | 1 Cup (16 tbs) | |
Directions
In medium bowl, combine tomatoes, artichoke hearts, olives, bell pepper and Parmesan cheese.
Place bagel pieces, cut-side up, on cookie sheets.
Spoon about 1 tablespoon vegetable mixture onto each bagel piece.
Sprinkle mozzarella cheese evenly over vegetable mixture.
Bake in preheated 400°F oven 6 to 8 minutes or until heated through.
