1. In a bowl, add the chopped apples, pineapple, walnuts, celery stalks, English cucumber and organic shredded dry coconut.
2. In the vitamix, add the pitted medjool dates, vanilla and water and blend until smooth.
3. Add the dressing into the bowl and toss well.
4. Place the lettuce on a surface and fill with the mix and wrap.
5. Plate and serve.
