 Prunes2 Ounce, stoned
 White breadcrumbs3 Ounce
 Cream cheese2 Ounce
 Button mushrooms2 Ounce, chopped
 1 tbsp fresh parsley, 1 egg. size 3
 Juice of 1 lemon or orange

Directions

MAKING
1. In a food processor, combine prunes, breadcrumbs, cheese, mushrooms, parsley and egg and process for forty seconds till smooth
2. Divide this stuffing between the escalopes and secure with toothpicks or string
3. Arrange them on a roasting tin, pour lemon and orange juice on top, season with pepper and cook for twnety five minutes

SERVING
4. Serve as required
