Ingredients

 
Eggs – 2
 
Salt to taste
 
All Purpose Flour – 1 ½ cups
 
Beef Chuck – 1 ½ pound, cubed
 
Green Pepper – 1, chopped
 
Onion – 1, chopped
 
Potatoes – 2, peeled, diced
 
Angostura Bitters – 1 tablespoon
 
Canned Beef Broth – 2 (10 ½ ounce)
 
Pepper to taste

Directions

MAKING
1) In a bowl, using a fork, beat the eggs with ½ teaspoon of salt added
2) Add flour to make a soft paste and and then knead the dough onto a floured surface till elastic and smooth
3) Roll out as thinly as possible and cut into 1 ½ inch squares with a sharp knife
4) Allow the pasta to dry on a cloth for several hours
5) In a pot, place and beef and cover with water
6) Bring to a simmer for about 2 hours till almost tender
7) Add the remaining ingredients except the pepper and noodles and simmer for 15 minutes
8) Add in the potatoes and noodles and cook till the potatoes are tender
9) Check for seasoning and add the pepper

SERVING
10) Serve warm
