Angels On Horseback Recipe
Ingredients
12 to 16 medium oysters
Freshly ground pepper
12 to 16 thin slices bacon
1 lemon, thinly sliced
Directions
Open oysters. (Use only tightly closed oysters; discard the half opened ones.)
Season oysters with pepper and wrap a slice of bacon around each; secure with a wooden pick or skewer.
Arrange in shallow baking pan and place in a hot oven (425°F or 220°C) just until bacon is crisp. (It is a good idea to pre cook the bacon slightly to shorten the baking time, as oysters must never be overcooked. Bacon should still be limp after pre cooking so it can be easily rolled around oysters.)
Garnish plate with lemon slices and parsley.
