Ingredients

 
12 egg whites
 
1.5 tsp cream of tarter
 
0.5 tsp salt
 
1 tsp vanilla extract
 
1 tsp almond extract
 
1 cup cake flour
 
1.5 cups sugar, divided

Directions

Beat egg whites until frothy, add cream of tarter and extracts
sift together flour, salt and 3/4 cup sugar. Sift again
Beat egg whites until stiff peaks form (do not let get dry)
add 3/4 cup sugar slowly (2Tbs at a time) beating after each addition
remove bowl from beater and sprinkle 1/4 of flour/sugar/salt mixture over top of egg white batter
fold in add remaining flour mixture 1/4 at a time folding in
spoon into 10 inch angel food tube pan and level surface
cook for 35 mins invert over a bottle until cool. Remove to serving platter
serve with strawberries or plain
