Recipe for Angel Hair Pasta with Fresh Tomato Basil Sauce, This is such an incredibly easy and delicious way to serve fresh tomatoes! Not having to cook the sauce saves time and keeps you away from the stove on hot summer days. It can also be served cold as a pasta salad to accompany grilled chicken or fish. The sauce is also an excellent topping for brochette, cheese omelets and chicken cutlets. I usually double the recipe so I have it on hand in the fridge for the next couple of days.

Directions

GETTING READY
1.Deseed the tomatoes and chop finely.
2.Finely chop garlic.
3.Roll the basil leaves and chop finely.

MAKING
4.Boil pasta in salted boiling water till al dente.
5. In a medium sized bowl add tomatoes, garlic, basil, olive oil, salt and pepper.
4.Set this aside at room temperature until the pasta is cooked or until ready to serve.
5.Slide the drained pasta in the serving bowl, add the sauce on top and toss them together.

SERVING
6.Serve warm with some freshly grated Parmesan on top.
