Anda Pulao Recipe
Ingredients
| Basmati rice | 1 Cup (16 tbs) | |
| Ghee | 1/4 Cup (16 tbs) | |
| Onion | 1 Small, finely chopped | |
| Garlic | 2 Clove (5gm) | |
| Turmeric powder | 1/2 Teaspoon | |
| Eggs-6 large, hard-cooked shelled and carefully pricked with fork | ||
| Red Chili powder | 1 Teaspoon | |
| Salt | 1 To taste | |
| Water | 2 1/2 Cup (16 tbs) | |
| White cumin seeds-1 teaspoon | ||
| Bay leaves | 2 (Whole spices:) | |
| Cinnamon stick | 1 (Whole spices:) | |
| Brown cardamom | 1 (Whole spices:) | |
| Green cardamom pods -2 | ||
| Black peppercorns | 4 To taste (Whole spices:) | |
| Tomatoes -2 firm, thick slices | ||
| Green chili | 1 (Garnishing:) | |
| Garam masala | 1/2 Teaspoon (Garnishing:) | |
| Coriander | 1 Tablespoon, chopped (Garnishing:) | |
Directions
GETTING READY
1)Clean, wash and soak the rice for some 30 minutes.
MAKING
2)In a pan, heat ghee and fry onion and garlic with all the whole spices until onion is golden.
3)Add the turmeric powder and the eggs and fry for 5 minutes. Turn eggs few times.
4)Then, add red chilli powder and rice and stir for 2 minutes.
5)Add salt and water. Cover and cook for 10-15 minutes on medium heat, until rice is tender.
6)Take a serving plate, put the rice and garnish with tomatoes and chili.
SERVING
7)Serve with a sprinkling of garam masala and chopped coriander.
