Anchovy Soup Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| Garlic | 4 Clove (5gm), chopped | |
| 1 or 2 cans anchovies | ||
| Parsley | 1 Bunch (100gm), chopped | |
| Tomato Paste | 1 Tablespoon | |
| 2 slices bread, without crusts | ||
| Hot water | 4 Cup (16 tbs) | |
| Pepper | 1 Teaspoon | |
| Parmesan cheese | ||
| Bread slice | 4 | |
Directions
MAKING
1)In a skillet, heat oil.
2) Add garlic and anchovies and saute for 3-4 minutes.
3)Stir in parsley, pepper, tomato paste and water and bring to a boil
4) Crumble in bread and simmer soup for atleast 10 minutes.
5)Sprinkle the remaining bread slices with parmesan cheese and toast lightly.
SERVING
6)Serve hot soup into soup plates.
7) Place a crouton on top and serve immediately.
