Anchovy Eggs Recipe
Ingredients
Butter
4 eggs
2 tablespoons cream cheese
1 cup whipping cream
2 teaspoons lemon juice
1/2 x 1 3/4 oz can anchovy fillets, drained and chopped
Salt and pepper
Paprika pepper to garnish
Directions
1 Lightly butter 4 ramekin dishes. Break an egg into each dish. Prick the yolk with a cocktail stick (toothpick).
2 Place the cream cheese in a jug and microwave on power
3 for 2 minutes, to soften.
3 Beat the cream and lemon juice into the cream cheese. Fold in the chopped anchovy fillets and season with salt and pepper to taste.
4 Divide the cream cheese mixture between the ramekins and sprinkle a little paprika on top of each.
5 Microwave on power 4 for 7-8 minutes, rearranging the dishes twice during cooking, if necessary. Allow to stand for 3 minutes before serving.
2 Place the cream cheese in a jug and microwave on power
3 for 2 minutes, to soften.
3 Beat the cream and lemon juice into the cream cheese. Fold in the chopped anchovy fillets and season with salt and pepper to taste.
4 Divide the cream cheese mixture between the ramekins and sprinkle a little paprika on top of each.
5 Microwave on power 4 for 7-8 minutes, rearranging the dishes twice during cooking, if necessary. Allow to stand for 3 minutes before serving.
