Anchovies With Onion Rings Recipe
Ingredients
| 6 anchovy fillets | ||
| Garlic | 1 Clove (5gm), minced | |
| Parsley | 2 Tablespoon | |
| Capers | 1 Teaspoon, drained | |
| Bread crumbs | 2 Tablespoon | |
| Olive oil | 1 Cup (16 tbs) | |
| Red wine vinegar | 1/4 Cup (16 tbs) | |
| Ground black pepper | 1 To taste | |
| 1 onion sliced into rings | ||
| Salt | To Taste | |
Directions
1. In a mortar, grind the anchovies with one tablespoon oil from the can until smooth. Add the garlic, parsley, capers and crumbs and continue grinding until the paste is well blended. Or use a blender and puree.
2. Add the oil, vinegar and salt and pepper to taste. Blend well and pour the mixture over the onions. Chill.
