Water-1 1/2 cups
Salt-1 teaspoon
Cornmeal-1/3 cup
Molasses-1/3 cup
Shortening-1 1/2 tablespoons
Yeast-1 package
Water-1/4 cup, lukewarm
All-purpose flour-4 1/4 cups, sifted
Directions
MAKING
1)In a saucepan, Bring water and salt to a boil; stir in cornmeal, molasses and shortening.
2)Let it cool to lukewarm.
3)In a small bowl, dissolve yeast and add it into cornmeal mixture.
4)Add flour and mix with spoon until stiff. Knead until smooth.
5)Allow it to rise in warm place for 1 hour and 30 minutes. Punch down.
6)Take a greased pan and put the dough in it.
7)Let it rise for 45 minutes or until doubled.
8)Bake at 375 degrees for 40 to 45 minutes.
SERVING
9)Serve Anadama bread with main course.
