Philippines Flan Recipe
Ingredients
6 egg yolks
2 eggs
1 (12 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
Grated zest of 1 lemon
1 teaspoon vanilla extract
1 cup sugar
Directions
Combine the egg yolks and eggs in a mixing bowl and beat well.
Beat in the evaporated milk and condensed milk.
Beat in the lemon zest and vanilla.
Chill, covered, until serving time.
Place the sugar in a heavy saucepan over medium heat.
Cook until melted and light brown, stirring constantly.
Pour the caramelized sugar into a loaf pan or ovenproof mold.
Pour the chilled egg mixture over the sugar.
Place the loaf pan in a larger baking pan.
Add water to the larger pan to a depth of 1 inch.
Bake at 300 degrees for 1 hour or until set.
