Amish Fastnacht Recipe

Ingredients
3 envelopes yeast
3/4 cup warm water
Pinch of sugar
Pinch of nutmeg
2 or 3 potatoes, peeled
1/2 cup shortening
1/2 cup (1 stick) margarin
1 cup sugar
2 eggs, beaten
1 tablespoon salt
1 quart milk, scalded
5 pounds flour
Shortening for deep frying
Directions
Stir together the yeast, water, the pinch of sugar and nutmeg in a bowl.
Cut the potatoes into large pieces.
Boil in enough water to barely cover for 20 minutes or until tender.
Mash the potatoes in the potato water.
Measure 2 cups of the mashed potatoes.
Combine the mashed potatoes, shortening, margarine, sugar, eggs, salt and yeast mixture in a large bowl.
Add the flour and milk alternately to the potato mixture, mixing well after each addition.
Knead on a floured surface for 10 minutes.
Place in a very large greased bowl, turning to coat.
Let rise, covered, in a warm place until doubled in bulk.
Punch the dough down.
Roll to 1/2 inch thickness.
Cut into squares.
Arrange the squares on baking sheets and let rise, covered, until doubled in bulk.
Deep fry until golden brown, turning once.
Drain on paper towels and roll in confectioners' sugar.
