Ingredients
2 cups raw rice (long grain)
1/2 lb. shredded cabbage
1/4 lb. chopped nuts
1/2 lb. ripe tomatoes
1 large chopped onion
1 tblspn, brown sugar
2 oz. currants
1 oz. sultanas
3/4 pint water
oil for frying
salt, pepper
Directions
Saute the shredded cabbage in hot oil for 5 minutes, then stir in the rice with another tablespoon of oil.
Cook for a further 5 minutes stirring constantly to coat the rice with oil.
Add water, onion, seasonings and dried fruit.
Mix well, cover and cook for 20 minutes.
Add peeled sliced tomatoes steeped for 10 minutes in 1 tblspn, of brown sugar, and cook for further 10 minutes.
Do not allow to go dry.
Add little more water if necessary.
