1 package 12 corn tortillas
2 cans enchillada sauce
1 can V-8 juice
1 medium package Velveeta cheese
2 pounds ground round or chuck
1 green pepper, diced
1 large onion, diced
2 cans chili without beans
Salt and pepper to taste
Parsley flakes
Directions
1) Saute onions and green pepper in butter. Add meat and chili and simmer.
2) Line bottom of large baking pan with 1 layer of tortillas and pour half the V-8 juice over them. Add half the meat mixture, sliced cheese and cover with 1 can enchillada sauce.
3) Repeat with another layer of tortillas, meat mixture and cheese. Cover with another can of enchillada sauce. Crumble remaining tortillas and cheese over the top.
4) Sprinkle with parsley. Bake at 350 degrees for 1 hour.
