American Haddock Casserole Recipe
Ingredients
1 lb (500 g) haddock fillets
1/4 tsp (1 mL) each salt and pepper
A pinch of nutmeg
1 small can cream of mushroom soup
1/4 cup (60 mL) cream
1/4 cup (60 mL) milk or white wine
1/2 tsp (2 mL) tarragon or thyme
1 cup (250 mL) Swiss or Cheddar cheese, grated
Directions
€¢ Cut the fillets into individual portions. Place in an 8 X 8-inch (20 X 20 cm) microwave-safe dish, one next to the other, whole or rolled, with thicker pieces toward the edges of the dish.
€¢ Mix together the salt, pepper and nutmeg. Sprinkle over the fish.
€¢ Mix together the cream of mushroom soup, cream, wine or milk and tarragon or thyme. Spread over fish. Sprinkle grated cheese over all. Microwave 8 to 10 minutes at MEDIUM.
