Amber Onions Recipe
Ingredients
2 cans (1 lb. each) small whole onions, or 2 pounds small onions
2 tablespoons butter
1 1/2 tablespoons honey
2 tablespoons tomato juice
1/2 teaspoon salt
1 teaspoon paprika
1/8 teaspoon pepper
Directions
Drain the canned onions thoroughly and turn them into a shallow 1 1/2-quart baking dish that has a cover.
If you use fresh onions, peel them and cook in boiling, salted water until barely tender, about 15 minutes.
In a small pan, melt the butter; add the honey, tomato juice, salt, paprika, and pepper.
Pour over the onions in the casserole.
Cover and bake in a 325° oven for about 1 1/2 hours.
Baste the onions several times with the sauce, but do not stir.
Remove cover for the last 45 minutes of baking.
