Amber Jelly Recipe
Ingredients
| Water | 1 Pint | |
| Lemon juice | 1/4 Pint | |
| 6 oz. loaf sugar | ||
| Gelatine | 1 Ounce | |
| Egg yolks | 3 | |
| Thin rind of 1 lemon | ||
Directions
Put all ingredients into a pan and allow to soak 5 min. Whisk over gentle heat until near boiling-point.
Do not boil or the eggs will curdle.
Strain through muslin and pour into a prepared mould.
