Amaretto Dessert Truffles Recipe
This Amaretto Dessert Truffles recipe can be tried out by anyone of any age. I love to use almonds in this Amaretto dessert recipe. It is unbeatable!
Ingredients
12 (1 ounce) squares semisweet chocolate
1/2 cup butter or margarine
2 egg yolks
1/2 cup whipping cream
1/4 cup amaretto
Finely chopped almonds or cocoa
Directions
Place chocolate in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts.
Remove from heat; add butter 1 tablespoon at a time.
Beat egg yolks at medium speed of an electric mixer until thick and lemon colored.
Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly.
Stir in whipping cream and amaretto.
Return to heat, and cook 1 minute or until mixture is thickened and smooth, stirring constantly.
Cover and chill at least 8 hours or until firm.
Shape mixture into 1-inch balls; roll in chopped almonds or cocoa.
Store in refrigerator.

Hi, these are chocolate truffles because they are rolled into balls. If you fill them into dessert cups and chill them you can serve this as a mousse too!
