Amaranth Baking Powder Bread Recipe

1 cup (240 ml) Amaranth Flour
 
1 1/2 cups (355 ml) Brown Rice or Whole Wheat Flour
 
1 tbs (15 ml) non-alum baking powder
 
1 tsp (5 ml) sea salt, optional
 
1 cup (240 ml) milk, soy milk or water
 
3 tbs (45 ml) honey
 
2 tbs (30 ml) Unrefined Vegetable Oil
 
2 egg whites, beaten, if using rice flour

Directions

Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients.
Pour batter into well-oiled 8x4-inch pan and bake at 350°F (180°C) about 45 minutes.
Cool 10 minutes before removing loaf to rack.
