aloo bhujia Recipe
Aloo Bhujia is a delicious combination of vegetables cooked in an array of Indian spices. Highly spiced, the dish is cooked initially with ghee and combines the flavors of onions, chillies, garlic and ginger.

Ingredients
| Potatoes | 3 Medium, cubed (boiled) | |
| Ginger | 1 Inch, finely chopped | |
| Tomatoes | 2 Medium, chopped | |
| Onions | 2 , sliced | |
| Coriander leaves | 2 Teaspoon, chopped | |
| Turmeric | 1⁄2 Teaspoon | |
| Green chilies | 4 , split | |
| Chili powder | 1⁄2 Teaspoon | |
| Onion seed | 1⁄2 Teaspoon (kalonji) | |
| Cumin seeds | 1⁄2 Teaspoon | |
| Cumin powder | 1⁄2 Teaspoon | |
| Oil/Ghee | 2 Tablespoon |
Directions
Heat the oil and add the cumin seeds and onions.
Fry till the onions turn translucent.
Now add the green chilies and keep frying till the chilies turn color.
Now add the remaining spices and fry for a minute.
Add the tomatoes and fry for a few minutes.
Add the potatoes and salt.
Add one cup of water and cook on a low heat, covered for 10 minutes.
Just before taking the dish off the fire add the chopped coriander leaves.
Goes very well with naan, paratha or puri.
