Directions

Boil, Peel and cut the potatoes in to small cubes.
Heat oil in a pan. Once oil is hot add mustard seeds,cumin seeds, asafoetida, curry leaves. As soon as they start splutter add green chillies and onions.
Fry onions till it becomes translucent. Then add turmeric powder and ginger garlic paste. Fry till raw smell from ginger garlic goes away.
Then add boiled potatoes and sprinkle salt. Mix it well.
Cover it for 5 minutes.
Aloo sabzi is ready. Garnish it with coriander leaves.
