 Butter/Margarine1/2 Cup (16 tbs), softened
 Granulated Sugar1/3 Cup (16 tbs)
 1/3 cup packed light brown sugar
 Egg1
 1 tablespoon dark rum or water
 Vanilla1 Teaspoon
 Baking soda1/2 Teaspoon
 Salt1/8 Teaspoon
 All purpose flour1 1/4 Cup (16 tbs)
 1/2 cup semisweet chocolate chips
 White chocolate chips1 Cup (16 tbs)
 Flaked coconut1/2 Cup (16 tbs)
 Macadamia nuts1/2 Cup (16 tbs), coarsely chopped
 Flaked coconut

Directions

Preheat oven to 375°F Line cookie sheets with parchment paper or leave ungreased.
Cream butter, sugars, egg, rum, vanilla, baking soda and salt in large bowl until light and fluffy.
Blend in flour until dough is smooth and stiff.
Stir in semisweet and white chocolate chips, 1/2 cup coconut and the macadamia nuts.
Drop dough by teaspoonfuls 2 inches apart onto cookie sheets.
Sprinkle tops of cookies with additional coconut.
Bake 8 to 10 minutes or until just firm in center.
Do not overbake.
Remove to wire racks to cool.
