Almost Strawberry Cheesecake Recipe
Ingredients
1 (0.3-ounce) package lemon-flavored gelatin sweetened with aspartame
1 cup boiling water
3/4 cup cold water
5 envelopes tabletop sweetener with aspartame
1 cup 1% low-fat cottage cheese
1 envelope whipped topping mix sweetened with aspartame
Graham cracker crust
Strawberry topping
Strawberry halves
Mint sprigs
Directions
Dissolve gelatin in boiling water, add cold water and sweetener, stirring well.
Chill mixture until consistency of unbeaten egg white.
Place cottage cheese in container of an electric blender, process until smooth.
Fold into gelatin mixture.
Prepare whipped topping mix according to package directions, fold into gelatin mixture.
Spoon mixture into graham cracker crust, chill until slightly set.
Spoon strawberry topping on cheesecake, and chill until firm.
Garnish with strawberry halves and mint sprigs.
