75 g (3 oz) (3/ 8 cup) butter
 
75 g (3 oz) (3/8 cup) castor (fine granulated) sugar
 
50 g (2 oz) (good 1/2 cup) flour
 
Pinch salt
 
75 g (3 oz) (1/2 cup) almonds, finely shredded

Directions

1 Preheat the oven to 200°C, 400°F;gas6.
2 Cream the butter and sugar until light and flurry.
Sieve the flour and salt and stir into the creamed mixture with the almonds.
3 Place a teaspoonful of the mixture on a well-greased baking (cookie) sheet and flatten with a wet fork.
Repeat with 3 more teaspoonfuls and bake for 6-8 minutes until lightly coloured.
Allow to stand for a second or two, then remove with a sharp knife and curl on a rolling pin until set.
4 Repeat the process until all of the mixture is used up.
