Blend 1 pound (about 4 cups) ground blanched almonds, 1 pound confectioners' sugar, 3 egg whites, 1 tablespoon lemon juice, 1/2 teaspoon orange extract, and 1/8 teaspoon almond extract.
Press into a ball.
Roll out about one third of the ball into an 8-inch round on waxed paper dusted with confectioners' sugar.
Roll remainder of ball into a 28x4 inch strip; cut into 4 pieces.
ICING: Add 3 cups confectioners' sugar to 2 egg whites and beat with electric mixer at high speed about 5 minutes.
