Almond Cream Pie Recipe

| Eggs | 2 , slightly beaten | |
| Rum | 1⁄2 Cup (8 tbs) | |
| Scalded milk | 1 1⁄2 Cup (24 tbs) | |
| Crumb pie shell | 9 Inch, chilled | |
| Whole blanched almonds | 1⁄2 Cup (8 tbs) (Toasted Lightly) | |
| Whipping cream | 1 Cup (16 tbs) | |
| Unsweetened chocolate | 1⁄2 Cup (8 tbs) |

Directions
1) In a bowl, sift together the flour, salt atop a double boiler
2) Add in the eggs and 3 tablespoons of rum and stir well
3) Add in the milk and remaining rum and gradually drop by drop
4) Cook over the hot water, continually stirring till the mixture thickens
5) Take off from the heat and allow to cool
6) In the pie shell, scatter in the almonds and then pour the filling atop
7) Cover with whipped cream and garnish with the shaved chocolate
SERVING
8) Serve Cold
