Almond Rice Chicken Recipe
Ingredients
1 tablespoon onion, chopped
3 tablespoons butter
1/4 cup flour
1 cup chicken stock
1/2 cup milk
1/2 cup light cream
1 cup cooked chicken, diced
3/4 cup blanched almonds
1 teaspoon salt
Dash of pepper
Grated cheese
2 cups boiled rice
Directions
Saute onion in butter until lightly browned.
Stir in flour, add stock and milk gradually, and cook, stirring until thickened.
Add cream, chicken, almonds, salt and pepper, and bring to a boil.
Mix with boiled rice.
Turn into a greased casserole or individual baking dishes and cover with grated cheese.
Bake at 400° about 20 minutes or until browned.
