1/3 cup shortening
 
1/2 cup sugar
 
1 1/2 cups oats, quick-cooking or regular, uncooked
 
1/4 cup water
 
1/2 teaspoon vanilla extract
 
3/4 cup all-purpose flour
 
1 teaspoon baking powder
 
1/2 teaspoon salt
 
1/2 cup toasted diced almonds

Directions

Cream shortening and sugar thoroughly.
Blend in oats, water and vanilla extract.
Combine flour, baking powder and salt; stir into creamed mixture.
Mix in almonds.
Chill in refrigerator 1 hour.
Shape into small balls, place on greased cookie sheets and flatten with spatula.
Bake at 400 ° for 8 to 10 minutes.
