Almond Glazed Picnic Cake Recipe
Ingredients
All purpose flour 1 cup
Milk 1/2 cup
Eggs 2
Butter 2 tbsp
Baking powder 1 tsp
Vanilla essence 1 tsp
Sugar 1 cup
Salt A pinch
Ingredients for Almond Topping
Flour 2 tsp
Butter 1/4 cup
Sugar 1/4 cup
Milk 2 tbsp
Almonds 1/2 cup
Directions
Procedure for Almond Topping Take all the ingredients of almond topping in a small pan.
Mix well.
Bring the mixture to boil.
Keep stirring constantly till it turns thick and glazy.
Procedure for Cake Whisk the eggs along with the sugar till it becomes pale and thick.
Mix the vanilla essence.
Add flour, baking powder and just a pinch of salt.
Blend properly.
Take the milk in small saucepan.
Heat it.
Put in the butter and keep stirring till the entire butter melts.
Add the milk mixture to the flour mixture.
But make sure that you mix just as much as is required to blend.
The batter is prepared.
Empty the batter into 8" spring form pan.
See to it that the pan is well greased.
Bake for about 35 minutes at 350°F or 180°C.
Wait till the crest of the cake is quite browned.
A test that can be conducted at this point is inserting a wooden pick at the centre of the cake.
If it comes out clean, then the cake is done.
Lightly and evenly spread the almond topping.
Now, place it about 6 inches below broiler.
Broil for about 3 to 5 minutes.
Wait till the topping bubbles and browns.
For about 5 minutes, let the cake remain on a wire rack.
Allow it to cool down.
Then release the edges and take out the cake.
Mix well.
