Almond Fudge Recipe
This almond fudge recipe is one of the gems from my family cookbook. If you have plenty of nuts on hand then almond fudge is the thing to make. This almond fudge is so tasty that I can not resist serving it as a dessert often. Just try it once, and you'll no doubt want to prepare this for your friends again.
Ingredients
3 cups sugar
1 cup milk
2 tablespoons light corn syrup
1/4 teaspoon salt
3 tablespoons butter or margarine
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1/2 cup coarsely chopped toasted almonds
Directions
Butter an 8x8x2-inch baking pan.
In heavy 3-quart saucepan combine sugar, milk, corn syrup, and salt.
Cook and stir over medium heat till sugar is dissolved.
Clip candy thermometer to side of pan.
Gently boil, without stirring, till candy thermometer registers 236° (soft-ball stage).
Remove from heat.
Add the 3 tablespoons butter or margarine.
Do not stir.
Cool, without stirring, to 110° Add vanilla and almond extract.
Beat vigorously till fudge stiffens and begins to lose its gloss.
Quickly stir in almonds.
Pour into buttered 8x8x2-inch baking pan.
Cool; cut into squares.
