Almond Cookies Recipe

Ingredients
1/2 cup blanched almond pieces, lightly toasted and finely chopped
2 cups unbleached all purpose flour
1 1/4 teaspoons cinnamon
3/4 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups sugar
2 eggs
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/4 cup vegetable shortening, room temperature
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1 egg
1/2 teaspoon salt
Directions
Combine nuts, flour, cinnamon, salt and baking soda until well blended.
Set aside.
Beat sugar and eggs in medium bowl of electric mixer until foamy and light.
Add butter and shortening and mix until fluffy.
Add extracts and blend well.
Add nut mixture and combine thoroughly just until flour is incorporated; do not overheat.
Transfer dough to waxed paper and roll into 2 cylinders each about 14 inches long and 1 1/ 2 inches in diameter.
Wrap well and freeze until firm.
About 15 minutes before baking, position rack in center of oven and preheat to 375°F.
Cut cylinders into slices 1/4 inch thick, reshaping into circles if necessary.
Place 1 inch apart on ungreased baking sheet.
Beat egg with salt and use to brush over dough.
Bake until lightly browned, about 8 to 10 minutes.
Immediately remove from baking sheet and cool on wire racks.
