Almond Soy Cookies Recipe
I loved Almond Cookies but I never thought I would be able to make them on my own. I was surprised at how tasty these Almond Cookies turned out, the very first time I made them. Great to make and eat!
Ingredients
2 tbs (30 ml) Unrefined Vegetable Oil
2 tbs (30 ml) honey
1/2 tsp (3 ml) almond extract
1 tsp (5 ml) vanilla
1 egg, beaten, optional for lighter cookies
1/2 cup (120 ml) Rice Flour
2 tbs (30 ml) Low Fat Soy Flour
1/2 tsp (3 ml) non-alum baking powder
Directions
Mix oil, honey, flavoring and egg, if desired, thoroughly.
Combine dry ingredients.
Stir dry and liquid ingredients together.
Roll dough into 3/4-inch diameter balls.
Place on oiled cookie sheet, flatten slightly.
Bake at 350°F (180°C) for 8-10 minutes or until cookies begin to brown around the edges.
Cool before removing.
