4 tsp cornstarch
 
2 tbsp soy sauce
 
1 lb chicken breasts,cut into strips
 
1/2 cup chicken broth
 
2 tbsp vegetable oil
 
2 cups celery, minced
 
2 cups snow peas,cut into diagonal slices
 
1 cup carrots, minced
 
1-2 large onions, minced
 
2 garlic cloves, chopped
 
2 tbsp water
 
Salt and pepper
 
2 tbsp toasted sliced almonds

Directions

Dilute 1 tbsp (15 mL) cornstarch in soy sauce.
Coat chicken with mixture.
Set aside.
Dilute remaining cornstarch in chicken broth.
In a wok, heat oil.
Stir fry chicken 4 minutes or until chicken turns white.
Remove from wok.
In chicken cooking fat, stir fry vegetables and garlic1 minute.
Pour in water.
Cover.
Cook 2 minutes.
Add thickened broth and chicken.
Continue cooking 3-4 minutes or until sauce reaches boiling point and vegetables are just tenderrisp.
Season.
Sprinkle with toasted almonds.
