Almond Cherry Squares Recipe
Ingredients
| Blanched almonds | 1/2 Cup (16 tbs) | |
| Semi-sweet chocolate | 4 Ounce | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Sugar | 1/3 Cup (16 tbs) | |
| Egg yolks | 4 | |
| Egg whites | 4 | |
| Cream of tartar | 1/8 Teaspoon | |
| Sugar | 2 Tablespoon | |
| 1 cup sweet, dark pitted canned cherries, well-drained | ||
| Whipped cream | ||
Directions
Grind almonds in a food chopper or blender, set aside.
Melt chocolate; set aside.
Grease and flour an 8-inch square baking pan; set aside.
Preheat oven to 350°F (175°C).
In a medium mixing bowl, cream butter or margarine and 1/3 cup sugar until fluffy.
Beat in egg yolks.
Stir in melted chocolate and ground almonds.
In a small mixer bowl, beat egg whites and cream of tartar until foamy.
Gradually add 2 tablespoons sugar; beat until stiff but not dry.
Fold into chocolate mixture.
Pour into prepared pan.
Spoon well-drained cherries over top.
Bake 20 to 25 minutes.
Cool before cutting into 2-inch squares.
Top squares with whipped cream.
