Almond Center Cookies Recipe
Ingredients
| 1/2 cup diet margarine | ||
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Almond extract | 1/4 Teaspoon | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 1/8 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| 9 whole blanched almonds | ||
Directions
1. Preheat oven to 375° F.
2. Using electric mixer at high speed, beat together diet margarine and sugar replacement in medium bowl until creamy; beat in almond extract. With mixer at low speed, stir in sifted flour, baking powder and salt; blend thoroughly.
3. Roll dough into 3/4-inch balls; place 1 1/2 inches apart on cookie sheet with nonstick finish. Flatten each ball with bottom of floured glass.
4. Split each almond in half; press into center of each cookie. Bake for 10 to 12 minutes. Remove cookies to wire rack to cool.
