Almond Butter Cookies Recipe

Ingredients
2 cups regular all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1 cup (1/2 lb.) butter or margarine
1 cup sugar
2 egg yolks
1/2 teaspoon lemon extract
3/4 teaspoon each vanilla and almond extract
About 4 ounces whole, blanched almonds, toasted in a 350° oven for 15 minutes
Directions
Sift flour, measure, and sift again with the baking powder and salt; set aside.
Cream butter and sugar together until light and fluffy.
Add egg yolks, one at a time, beating well after each is added.
Blend in lemon, vanilla, and almond extract.
Gradually add flour, mixing well.
Pinch off pieces of dough and form into 1-inch balls.
Set on an ungreased baking sheet about 2 inches apart, and press a toasted almond in center of each.
Bake in a 300° oven 15 to 20 minutes, until edges just begin to brown.
Cool 5 minutes, then remove to racks.
