Ingredients
20 ounces almond paste
2 egg whites
3 slices pineapple
7 ounces sliced almonds
Directions
1. Cover one or two baking sheets with lightly greased aluminum foil.
2. Grate the almond paste or crumble it in a bowl. Add the egg whites and work the mixture until smooth. It should not be too loose and thin.
3. Take teaspoonfuls of the dough and shape into small balls. Roll them in the sliced almonds and put them on the baking sheets. Cut the pineapple in small pieces and press one piece into each ball.
4. Place in a 350°F oven. Allow the cookies to rest while the oven gets warm.
5. Bake 10-15 minutes. Watch carefully. The cookies should be light yellow and the almond slices lightly browned.
