Almond Apricot Coffee Cake Recipe

Ingredients
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup (1/2 stick) butter or margarine
1 egg, beaten
3/4 cup milk
1/4 teaspoon almond extract
1 cup apricot preserves
1/2 cup sliced almonds
Directions
1. Preheat convection oven to 350°F.
2. Combine flour, sugar, baking powder and salt in a bowl. Cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs.
3. Combine egg, milk and almond extract. Stir into dry mixture just until moistened. Spread half of batter in a greased 10 3/4x7xl 1/2-inch metal baking pan. Spread preserves over batter in pan. Drop remaining batter by spoonfuls onto filling; spread carefully. Sprinkle with almonds.
4. Place on bottom metal rack. Cook in convection oven 30 to
35 minutes at 350°F, or until a wooden pick inserted near center comes out clean.
