GETTING READY
To prepare the slaw:
1. In large mixing bowl, add the finely sliced cabbage, red onion, carrot, cucumber and bell pepper.
2. In a separate bowl, mix together the seasonings and pour it into the bowl with the vegetables. Toss it well and refrigerate.

MAKING
To prepare the Alligator Tacos:
3. In a sealable container, place alligator meat and coat it with olive oil, fresh black pepper, crushed Sandia pepper, cayenne pepper, sea salt and Apple cider vinegar. Marinate overnight.
4. Place peppers, onions and marinated alligator on the grill and cook. Once everything is grilled, remove pepper skins and seeds.
5. Cut up the peppers, onions and alligator meat into strips to be placed on tacos.
6. Heat the flour tortillas until soft.

FINALIZING
7. Build your tacos with the grilled peppers, onions, alligator meat and slaw.

SERVING
8. Serve immediately.
